Coconut Sugar is the dried sap from fresh coconuts. It has a low glycemic index (less than or equal to 55) which makes it an attractive sweetener option. It has an earthy, nutty and sweet flavor. Unlike most refined sugars that form a crystalline structure, coconut sugar is a moist, granular powder, reminiscent of brown sugar. Because the product is unrefined, the color can vary from a light to dark brown. It can be used just like sugar in most recipes.
